Khachapuri
Georgian cheese bread
Ingredients

* 2 cups unbleached white flour
* ½ teaspoon salt
* 12 tablespoons (1½ sticks) cold butter, cut into pieces
* 2 eggs, beaten separately
* ¼ cup plain yogurt
* 1¼ pounds mixed Muenster and Havarti cheeses
* 1 egg yolk, beaten

Directions

1. Place flour and salt in a bowl and mix in butter pieces.
2. Stir one beaten egg into the yogurt, and then add the liquid to the flour mixture.
3. Shape the dough into a ball and refrigerate for one hour.
4. Grate the cheese and combine with the other beaten egg. Preheat the oven to 350°F.
5. Roll out dough to form a 12-by-17-inch (30-by-43-centimeter) rectangle, trimming the edges.
6. Put the cheese mixture on one-half of the dough and fold the other half over the top, sealing the edges.
7. Place cheese dough on a greased baking sheet. Bake for about 50 minutes or until brown.

Cut into small squares to serve. It is best served slightly warm.
